Grain group is an important and economical carbohydrate source that is located at the bottom of the nutrition pyramid. Cracked wheat is a valuable foodstuff that belongs to the grain group. In order to understand the cracked wheat well, its main raw material wheat should firstly be understood. Wheat composes of 3 sections, which are core, bran and endosperm. THE DIFFERENCE OF BULGUR Generally in products made of wheat, micronutrients in core and bran sections are separated during wheat processing and the only section that reaches to us is the one that gives energy just like white bread. However, bulgur can exactly be defined as full grain because wheat is not grinded during the bulgur production and a product, in which protein, vitamin, mineral, and diet sediment amount is higher, is obtained. Furthermore, bulgur can be considered as healthier among similar foodstuff, as its glycemic index is lower than macaroni and rice. Briefly, bulgur is a very valuable foodstuff that is rich in terms of sediment and fibers, has low carbohydrate values and high protein values. BENEFITS OF BULGUR Containing very high amount of fibers, bulgur is very important for intestinal activities. Furthermore, cracked wheat has a significant role in weight control, as it has a filling feature. According to World Health Organization, our daily fiber need is around 25-30 gr. We can easily cover this need by having one serving of bulgur. B1 vitamins it contains play a significant role in strengthening our nervous and digestive systems. Moreover, this vitamin should regularly be consumed in order to prevent beriberi disease. Additionally, bulgur is extremely necessary to improve the intelligence level of the babies of pregnant women, as it also contains folic acid. Bulgur makes you feel full for a long time and is a product that can be used in diets for its glycemic index is low and it slowly flows into blood. It is also recommended for diabetic patients. Moreover, it offers a variety, as it can be used in many meals such as salads, hot and cold meals.

Ginger is a rhizome (root) and grows underground as a thick, tuberous stem bearing both roots and shoots. In the Middle Ages, spices were used as currency; a pound of ginger could easily buy you a sheep. Whole ginger can be used for pickling, beverages (including ginger beer, ale and teas), teriyaki sauce and marinades. It’s important to note that fresh ginger and dried ginger shouldn’t be substituted for one another, but rather, dried whole ginger can be reconstituted. Simply soak in warm water for 1 hour, then use as you would the fresh.

HAZELNUT FACTS: Because of its distinctive composition of fat (mainly oleic acid), protein, carbohydrate, vitamins (vitamin E), minerals, dietary fiber, phytosterols (beta-sitosterol) and antioxidant phenolics, among the nut species, hazelnut plays a major role in human nutrition and health. The nutritional characteristics and the taste of hazelnut make it a unique and ideal ingredient for various food products. Hazelnut is a rich source of energy as its oil content ratio is around 62%. Many researchers have stated the beneficial effects of hazelnut consumption on human health. These effects could be related to the fatty acid profile of hazelnut lipids, which are rich in mono- and polyunsaturated fatty acids [oleic (82%) and linoleic (9%)]. Studies have shown that diets low in saturated fats and high in monounsaturated fats (MUFA) are effective in controlling the blood lipid levels, which makes it also likely that the risk of coronary heart disease (CHD) decreases. In addition, diets enriched with MUFA, which is high in hazelnut oil, have also similar positive effects on the human health such as low occurrence ratio of CHD, decrease of blood pressure, decrease of total cholesterol, decrease of low density lipoprotein (LDL), increase of high density lipoprotein (HDL) and decrease of blood triacylglycerols in humans. Hazelnut is the second best source of vitamin E after plant oils. Vitamin E is a lipid soluble phenolic antioxidant. The antioxidant characteristic of phenolics bases on their ability to convert hydrogen atom to free radicals. It is widely acknowledged that these compounds have the potential to prevent cancer, arteriosclerosis and diabetes, as they are able to support the formation of free radicals. Because of the antioxidant role of vitamin E and its relationship to CHD and cancer, there is an increased interest of the consumer and industry in food products including hazelnuts and hazelnut products. 100% of the recommended daily allowance (RDA) for vitamin E can be reached by hazelnut consumption of only 25-30 g per day.

It is one of the oldest condiments known to man. Records of its production in the Tigris and Euphrates valleys date back to 1600 B.C. The Egyptian name for sesame, sesemt, is found in the list of medicinal drugs recorded in the Ebers Papyrus, dated about 1550 B.C. In The Thousand and One Nights, the story of Ali Baba and the forty thieves, a password was needed to open the door of the robbers' den. The magical command "Open Sesame" may have been chosen because the ripe sesame seeds burst from their pods suddenly with a sharp pop, like the springing open of a lock. An herbaceous annual, sesame is grown only from the seed. It thrives best in sandy, well drained soils in a warm climate with moderate rainfall. The plants, which grow to a height of two to five feet, need a fairly long growing season of about four months to mature their seed. The seeds are small, glossy, flattish, and oval-shaped, about one-eight of an inch in length, one-twentieth inch thick, and are available hulled or unhulled. The hull seed is pearl white in color. The unhulled seed varies in color from white to black though, depending on the cultivar, some are red or brown. The seeds are highly nutritious, containing up to sixty percent oil and twenty five percent protein. When roasted, they have a tasty, nutty flavor reminiscent of the almond. India and China are the world's largest producers of sesame seeds. Most of all the sesame seeds that are harvested are converted into sesame oil. Other important producing countries include Ethiopia, Nicaragua, the Sudan, Mexico, Guatemala, and the United States. The crop is grown extensively in this country in Texas, California, Louisiana, and Arizona. Sesame seeds are consumed in a variety of ways throughout many countries. They may be eaten dry, added to soups, used as garnish on savory dishes, and used in many candies and cakes.

Sumac

Saray     5lb.

Sumac comes from the fruit of a bush indigenous to the Middle East. The bush is actually a member of the cashew family and the fruit is used widely in Turkey and other Arabic countries. Sumac is a main ingredient in the Middle Eastern spice blend Za'atar. Before the Romans learned of lemons, they used sumac for its sour and pleasantly astringent taste. They called it Syrian sumac. Sumac berries are picked, dried and ground into a coarse powder before being used in the cooking process. This powder is used to flavor salad dressings, meats, rice dishes and kebobs. Sumac can also be mixed with other vegetables such as onions and used as a condiment.
