Bulgur for human consumption is usually sold parboiled, dried and partially de-branned. Bulgur is a whole grain. Bulgur is sometimes confused with cracked wheat, which is crushed wheat grain that has not been parboiled. Bulgur is a common ingredient in Turkish, Middle Eastern, Indian and Mediterranean dishes. It has a light, nutty flavor. A variety of mezes and main dishes are also prepared with bulgur such as çig köfte, içli köfte, kisir and ezogelin soup. In Cyprus it is used to make koupes (also known as bulgur koftesi), a variety of kibbeh. It also forms the base of a soup, tarhana, which is made with yogurt to which hellim/halloumi has been added.

This is an ancient bulgur of which has not been changed genetically more than 10,000 years and it is famous from Kastamonu region in Turkey. The production process for bulgur is relatively simple. The husked grains are covered with boiling water for about 20 minutes, then immediately cooled with cold water and spread out in the sun to dry. The wheat is then brought to a mill where it is ground repeatedly until the grains are cleaned and crushed.

The grains grow mature and became hard in wheat ears. They have not been dried completely yet. These ears are collected when they are green, and they are dried with fumigation method by burning the stalks on the fire. During drying operation, the grains becomes sooty with the smoke of the stalks and nice aroma and odor emerged. Its pilaf cen be prepared by mixing with other bulgur types.
